A dessert that is Yummy AND good for you too?

Come on… yeah right.

Well, allow me to let you in on a little secret. This is REALLY as good as it looks and it isn’t even a dessert (although it certainly could be) 😉

I am not going to lie to you, I LOVE CHOCOLATE!  There I said it!  It almost feels liberating to just get it off my chest, but honestly, I have chocolate every single morning for breakfast and have for almost 5 years now. So when I saw this recipe I just had to give it a try and I promise when you are done reading this you are going to want to as well ;).

I am always on the hunt for new and different recipes to try and share with my clients and customers. Breakfast seems like such a tough meal for so many people on the go, those trying to get their kids off to school in the morning, rushing to work, or yes those of you who just plain don’t eat anything in the morning.  I get it.  Mornings are tough which is why I absolutely love overnight oats.  They can be made ahead of time, put in the frig, and are ready to go in the mornings.  Did I mention that they make great breakfasts for those picky eaters in the house or as a great afternoon snack?

When I saw this recipe for Brownie batter Overnight Oats, I just had to give it a try.  I mean how good could it really be?  Now before you just scroll on by, let me warn you, that my meals don’t always have to taste good to eat them as long as I know they are good/healthy for me, but there is ABSOLUTELY no way in H-E- double toothpicks that I am going to get my husband to eat something that doesn’t taste good and he IS the one that needs to be eating healthier breakfasts so guess who I had in mind when this concoction was put together.

Brownie Batter Overnight Oats Recipe

Now mind you there are other recipes out there and lots of options that you could probably put in and it would still taste yummy, but these are the ingredients I went with:

Ingredients:

  • 1/4 cup of old fashioned oats – I used Bob’s Red Mill organic old fashioned rolled oats- gluten free, but you could use any kind.
  • 1/4 Cup of unsweetened coconut milk – you could also use almond milk or cashew.. or regular low-fat milk.
  • 1 Tbs Unsweetened cocoa powder- I used organic 
  • 1/2 Cup of plain greek yogurt (I opted for 1/4 cup and 1/4 cup water instead optional but adds extra protein)
  • 1/8 tsp Salt, I use pink Himalayan  
  • 1 tsp vanilla extract (optional) again I used homemade organic
  • 2 TBS Chocolate  Vegan Shakeology or  chocolate protein powder 
  • If you use the Shakeology you probably won’t  need any sweetener… I didn’t.  if you do, add a little liquid stevia.
  • 1 tsp of Chia seeds.

Ok Here comes the SUPER EASY PART!

Directions:

  • Toss all of this in a mason jar, or tupper-ware with a top, cover with the lid, mix it up and set it in the fridge overnight. This is good for about 2 days, so if you don’t get to it tomorrow… eat it the next day!
  • I refrigerate overnight usually but you could let it just sit for an hour or so until the oats absorb the liquid or microwave for 60 seconds and eat warm.
  • Now if you are following any of the nutrition programs that I recommend, here is the breakdown on the containers: 1.5 YELLOW and 1/2 RED if you add the yogurt.

I am telling you, you will love it.  Add your own flavorings and play around with it a little, but you are going to be wanting to make this over and over.  I know we will be!

And yes those are a few organic dark chocolate chips on top because we can 🙂
